François-Xavier Delmas is the creator of Palais des Thés, which has now 40 tea shops in France and abroad : Brussels, Dublin, Tel Aviv, Tokyo, Oslo, Luxembourg and New York. For 29 years, he has been visiting tea plantations and spending months in the best production sites in the world in order to choose the tea now found in his shops, in France and around the world. His knowledge of the tea world and his expertise in tea-tasting make him an authority in the field, worldwide. He is also the author of the Tea Drinker's Handbook, which was published by the Editions du Chêne in 2007 and translated into English. Mathias Minet is a tea taster. He joined Palais des Thés 17 years ago and now co-directs the company. In 1999, he and François-Xavier Delmas co-founded a Tea School in France, to train the next generation of tea-sommeliers.
